ACCOLADES

  • 2024 Air Canada’s Best New Restaurants, 4 November 2024

    Canada’s Best New Restaurant - No. 9

“The jumping off point for Gary’s, the first restaurant from industry vets Bailey Hayward and Mathew Bishop, was a friends-only supper club. Now menu-carrying members, we lean back in our chairs and spring for the crudo, gem salad, hen-of-the-woods and rabbit. All warrant membership, but the roasted leg, in a consommé with petit garlic sausages and early-summer vegetables, is our runaway favourite. Broad ribbons of lightly-fermented sauerkraut are languid in a transparent broth, with a clarity that belies its depth of flavour.”

  • 2024 MICHELIN Guide, 3 October 2024

    Bib Gourmand

“It's easy to be won over by this convivial neighbourhood spot, which owes its easygoing charms to the combined efforts of partners Bailey Hayward and Mathew Bishop (who oversee the service and the kitchen, respectively). To match the relaxed, friendly vibe, the cuisine is rustic and approachable, offering hearty dishes that draw inspiration from French country cooking, as in asparagus with saffron rouille, or pork collar with parsley sauce—and don't miss out on the fluffy, freshly baked rye rolls, served with green garlic butter. For a final slather of indulgence, do order dessert, like a rum baba soaked with chamomile-scented syrup and capped with a ribbon of decadent pistachio custard and a cloud of chantilly.”

  • Outstanding Service Award

Carefully curated but totally unpretentious best describes the vibe at Gary's, thanks to the work of co-owner and Operations Manager Bailey Hayward. The resulting experience is everything one could ask for in a neighborhood restaurant: approachable, friendly, and engaging.

With her partner in life and in business Chef Mathew Bishop, she started the restaurant as a friends-only supper club at their home. Today, in a brick-and-mortar location, it emanates that same warm and intimate feeling for any guest. Fittingly, Gary’s uses three words to describe itself: “a nice place.”
